Born and raised in Mexico City, Chef Sebastián Álvarez came into his culinary career because of his obsession with the Mexican food he grew up with, and his passion led him to pursue three specialisation programmes at the Mexican Gastronomy School (ESGAMEX), Mexico’s oldest and most respected culinary school dedicated to the research, promotion, and preservation of traditional Mexican gastronomy.

His interest in food is shaped by his experience with Mexico City’s street food scene, as well as his deep passion for interior design, graphic design, branding, photography, and storytelling, and this eclectic set of passions and interests have led him to work with some of Singapore’s most prominent figures in various fields and industries, such as museums, event planning, luxury brands, and of course, restaurants and bars.

Chef Sebastián is currently Executive Chef and Owner of COACOA, a culinary consultancy service that explores Mexico’s history and cultural heritage through food.
