Jay has been concocting coffees and tending bars for over two decades, and has ample experience conducting classes to budding baristas and mixologists.
Since being in charge of the bar at Breeks! The American Restaurant, Jay has gone on to set up multiple outlets of various big-name cafes and restaurants; but her true passion lies in bringing out the subtle notes of coffee beans and intense flavours of alcohols and spirits.
Over the years, Jay has had the opportunity to explore the diverse world of coffee beans, concoct new cocktails, and taste the best of the world’s wines, which has developed a high level of sophistication and complexity in her palate. This allows her to discern the subtle intricacies of different roasts of coffees, or different textures and flavours of alcohols.
Coupled with her intensive experience of managing operations of culinary schools, restaurants, and cafes, Jay’s classes will be a whirlwind of information and fun for all who are interested in elevating their palate for beverages.
